Category main and sub filtering pages

I need the collection link page which has the primary collections to link to pages with their sub collections listed. For example the Pin Up Wall Art needs to link to a page that contains a list of the sub collections, American Pin up Magazine Covers, American Pin Ups, French Pin Ups Magazine Covers and French Pin Ups. Then each of those sub collections will need to link to their contents. How can I do this?

Currently the collection list will show all products in all sub categories within the main category, which isn't the what I need.

There are no concepts of Sub-Collections in Shopify.
