Craft Theme - How to turn on availability to in stock by default?

I want to only display products that are in stock by default. I just realized that the craft theme I'm using has a filter on top that you could select to choose the availability. How can I make it so that when the customer first comes to the collection, he sees only the products in stock but then has the option to take the flag off and see products in stock & out of stock?
