Customize theme

Hello everyone,
We are currently working on a project to create a grocery store that will be both a store and an ecommerce.
We've started to create the ecommerce with WordPress/Woocommerce but we're beginning to see the limits, especially for putting the site into production with all the extensions we need to have and finding a checkout solution that's compatible with Woocommerce....
Before launching the site, we wondered whether Shopify wouldn't be more suitable with its Online Shop and PoS solution.
We like the interface, the navigation of this site which is obviously on Shopify with "Dawn" theme.
The question is, does it require much modification to achieve their result?
For subscriptions, which one do you recommend we go with?

The popup of checkout is native ? No need to extension or plugin fot the theme dawn ?
