Shopify themes, liquid, logos, and UX
I am using the Dallas theme, and when a product is sold out, the "Add to Cart" button is disabled and replaced with some text that can be edited in the theme settings.
I am trying to get the "Sold Out" button to instead link to the contact page instead of being disabled entirely... The product form is built in liquid, which I'm not very familiar with (see the attached screenshot). How would I add a link to the "sold out" state of the button?

It sounds like you don't want to miss out on sales or expressions of interest on sold out products. If you were to simply link the Sold Out button to the contact page, most customers won't realise the button is clickable and just move off the page/store, so I'm not sure this would help much with this.
Rather than trying to manage the button link and text for these products, as well as manually dealing with emails expressing interest, have you considered a back-in-stock app? You could use one to add a Notify Me When Available button to your sold out products automatically and capture the customer's email address + automatically let them know once the product is restocked.
Some of these apps (including Early Bird, the app I run), can also give you the option to continue selling sold out products as back-orders or pre-orders, as well as the email signup form. It's free to try if you wanted to give it a go.
Thanks for the help, but in this case the client specifically wants to link the disabled "Sold Out" button to an "Mailto:" email link.
