Dawn - Replace variant default size to TEXT

Hello, I'll try again... I want to have placeholder text for the size variant drop-down... rather than the default smallest size. Id like to change the placeholder to "Select size"

How can this be done?

none of those exist in my main-product.liquid. I'm using dawn theme 12.0.0
