Different description types for different collections

Hi, I am trying to set up a store with a few different categories, such as jackets, hats, bags etc. For the jackets the following dropdown menus relating to product metafields are displayed: (Material, About this product, Sizes & Fitting) respectively. 

However, for the category bags, I wouldnt want these descriptors, but for example: (Material, About this product, Zipper Type). How do I achieve this?

You will need to create multiple product page templates with different content. Once you have created the templates, you can assign different products to each one.
