Does Shopify constantly change the docs and delete old content?

Im currently learning shopify development but as I follow along the video I will reference a shopify doc and then when I try to go search for it I cant find it. It doesn't exist anymore or if I do find it the content is completely different and the code that he is using is no longer displayed on the page. For example when I was looking for video_url I typed in the exact address he had but when I got to the page it no longer had the same content that he referenced.

Keep in mind I'm starting from a new theme so there is very little starting code. Has Shopify just removed this from the docs because they have integrated it into the customizer so the customer or developer no longer have to go into the code to edit it or add content, or have they just found a better way of incorporating a video using code and video_url is no longer used?

You hit the nail on the head, our docs team is altering and changing the docs on a continuous basis due to industry changes, code and theme changes (such as the new Online Store 2.0) to make sure the information doesn't become obsolete. If you do see something which is incorrect or doesn't make sense, don't hesitate to contact our support team directly or let us know here and we can contact the docs team to look into it further! 

You touched on adding a video to the store, the docs team have this in a doc about adding product media here. This would answer your question of:
