Dynamic Variants for Products - Fragrances

I just noticed Variant metafields today it led to me thinking, is it possible to have a metafield which can connect directly to variants available in stock?
The use case being I have candles on my website, and about 30+ fragrance types, which aren't always in stock, and my thought process was that if there was a metafield sheet where I could update the fragrances regularly in stock and it would reflect on all the candle product options it would be most helpful as compared to going on each product and individually updating the fragrances
I'm not sure if what I'm asking is even possible, but thought this would be the best place to ask 🙂
