Group Tags Together Based on Prefix (Refresh Theme)

Hello again! I'm looking to simplify our Filter options on our Collections page. When we select Filters in the top left hand corner, a menu opens on the right hand side. We're currently using the Shopify Search & Discovery app, and created an option called "More Filters". It's housing all of our product tags at the moment, but it's displaying the entire tag (not certain but I think it might be because of the Refresh Theme). Ex. Genre_Science Fiction when it should just say Science Fiction.

Is there a way to remove the prefix from the Filter option? And moreover, is there a way for us to group the tags together? So that the thread would look something like Filters -> More Filters -> Genre -> "science fiction". Where science fiction could be any genre listed and displaying without the prefix?
