How can I add option choices to product variants in Shopify?

I am just starting with Shopify. For my planner products, I use variants such as year, layout, and week start day. So, for example, if I defined 3 different years, with 4 different layouts available, and 2 choices for week start day (i.e. Sunday or Monday), then I will have 24 variants. Then I also need to add options such as customization, starting month, which holidays to include, whether to include phases of the moon, special notes about the customer's order, etc. Some options will add to the product cost. The variations are working perfectly, creating the SKU combinations I need. But I cannot figure out how to add the option choices. Can standard Shopify do this, or do I need a separate add-on app?

If you do need to track the inventory of those choices, I recommend using the Shopify UI to generate the option choices you have. You can use the video tutorial as reference

Wouldn't changes to the UI code affect every product?  Options are not the same for every product, so if the line item properties would become site-wide, then it wouldn't work.

Since you are editing the product section, yes it will affect your other products. However, you can also create a template for the product group to use.

No, I don't think that works -- I'd need to manage some 30 templates to
cover all the product option combinations. It's incredible to me that
Shopify can't do such a basic thing!
