Is there somehow a way to make a feedback pop-up asking the customer why they left the checkout?

This is certainly doable but I'm afraid it does require some technical planning in advance, working alongside a developer would be crucial.
The main "issue" is where/how these feedback will be stored. If the feedback is simply going to be sent as an email, it would be easier.
If you'd like to actually store it somewhere, like in a spreadsheet, wiring it up with a database (like a headless Wordpress [where you use only its database and not the actually website] or even a Google Sheets) would be the best way to go.
