How can I remove 'My Store' from the footer?

I've already deleted "powered by shopify" from the footer but now it says "my store" how can i get rid of this?

It is copyright option in your Online store > Themes > Customize > Footer. You can uncheck that option to remove My store from your footer.

Add this code to Custom CSS of Footer section

that worked but now it just says "ⓒ2023," how can i get it to display that followed by my stores name

After a bit of searching around, I found the setting where "My Store" is. This is actually your shop name in the Store details section. I would recommend just changing it to your business name. That's what I did. See screenshot of the setting to change. Hope this helps.
