I have no idea why Shopify includes the order number on the customer-facing shipping label. It's information that's unnecessary for them. Is it possible to edit this out?

I was having the same issue. It's a bit tedious, but I found if you save the label as a PDF, you can open it up in an application, remove it, resave it, and then print it.
To save time, I created an action within photoshop. Instead of printing my labels, I save them all in one folder. When I'm done, I go into to Photoshop, File, Automate, Batch and select the folder and the action. It pulls each one up automatically, cuts out the order information on the right, replaces my information on the left with a better looking logo and address, prints, saves, closes, and then goes to the next one.
