Shopify themes, liquid, logos, and UX

Our Need + Details:
my client wants to add another store/location to her online Charcuterie business. She has requested the home page be sort of a landing page with two buttons, one to direct to location A, the other to direct to location B. Each location offers different product options. Location B is what is live currently (https://boardsofkeremeos.ca/) and Location A is what I need to add. Location A will need 4 pages dedicated to it without seeing the navigation options for Location B. I hope that makes sense! It's tricky to explain.
Issues to solve:
When ordering from one location we don't want to to see the options for the other locations, including the navigation menu for that location.
We also use a customer-facing app called DATO for our delivery date selection. We'd need different DATO calendars for each location. Or a different app that can do this.
What is the easiest solution without needing to open another Shopify account and get another URL? She'd like to use the existing URL for both locations, if possible. Essentially, I'm trying to create two websites on one account with only one URL.

Two websites... or two experiences. The latter is saner.
This is an ~advanced theme customization.
It has some overlap with membership/wholesale single-store customizations, sans the tagging of customers, copy products, etc.
Either use two themes and swap them using the preview_theme_id url param, ⚠️ with css to hide preview bars.
Or grossly copy the header menu, give it a unique name. Make a unique navigation menu, assign it to that section.
Then hide/show the relevant header-menu using either cookies to set display logic per visit , or cart attributes to set logic in templates, etc.
💣This only the menu, it will NOT hide products, suppress search results or do other magic etc etc.
There's a lot of knock on effects and tradeoffs in doing cheaper workarounds like this.

Customization of app integrations is it's own issue, the app basically needs a way to swap it's behavior from some frontend condition EVEN if it's the same product. Alot of the time it means two sets of products then doing inventory sync. Or in some cases using alternate templates i.e. templates/product.locationA.json

🤔currently the markets feature doesn't let you use the same region twice in different markets, if that ever changes that would probably be a better way to manage this.
