Over riding Default setting + size chart

hiya

I have set up 3 x size charts.  I have them womens, kids and unisex.  My problem is that all my products are in default products, thus when i change one, they all change. ( i have 3 collections).   How can i assign the relevant chart to the relevant collection ?
