Permanently change name of variant option

Is there a way to add a variant option and make it the default variant option in the dropdown? There are only 5 basic options:

I am selling wine and I want to change the variant option name to Vintage.

Great question! I'm afraid it would not be possible to rename the pre-created options that appear in the dropdown menu; however, you can delete and rename the value that appears in the text field. Alternatively, you could choose to import your products via CSV which would be a more efficient method of creating your variants and/or products if you have several products to create. You can learn more about using products CSV's through our help centre here

Let me know if you have any questions.

It would not be possible to rename the pre-created options that appear in the dropdown menu, nor is it possible to add options to this menu.

If your variant options names are outside what appears in this list, then you can manually type them in the text field instead.

And you've just disappointed all Canadians and those who prefer to use UK spelling. Perhaps in a future update, you might include a lot more people.

You'd save us so much time & effort.

Is there seriously still no way to change this in liquid?? What the hell. Does shopify just ignore people who want to sell food products on the store page?

I get you can put your own custom one in. But when you have multiple people entering product info and the filter's rely on the variant option names to be spelled correctly it's frustrating.

This is actually a UI mistake on Shopify's part, you can just type it in but... when you hit enter it erases it. Users expect this to add the value and skip to the next field but that doesn't happen. You have to click or tab to the next field or the value will be removed. Shopify missed something on this. A small thing but I'm sure tons of users pulling out their hair before they figure it out.

I was able to enter my own custom variant name until yesterday and now it is forcing me to choose a prefilled option and not allowing me to add a custom name. It stopped doing this for me today. Was there a recent update that messed this up? WHen I add my custom name and hit return it does not add my field but adds a reselected option.
