Shopify themes, liquid, logos, and UX

We had hired a company to do a website design but they bailed on us. We decided to take over the process in-house. With that in mind, we want to continue on that path. We are in the middle of design, purchased a template (Concept) we feel is logical, and are learning the system. A few things we are not able to really understand or rather comprehend fully and we want to choose the best options. Maybe someone can help. We appreciate any experts for their time spent truly. Current site is on shift4shop and we were very unhappy with it and we are excited to get onto shopify.
We are utilizing chatgpt for assistance on product descriptions. We spent a large portion of time having gpt help us design an SEO efficient template that includes the majority of things we feel are needed on each description. We do plan to enter SEO info on all photos moving forward, including details like alt text and captions. Below are some areas we are unsure of:
1. Under product pages there are categories and types. After reading and re-reading we came up with the idea that using the category, even when sounds a little off, is best. We have thus been leaving the type blank on those. Example... We make a carry tray for drinks that glows and is designed for alcohol shots. We chose "decorative trays in decor" as we could find nothing closer and we left product type blank. Any advice and why?
2. GPT is giving us what it calls or good SEO titles. Example for our LED Carry tray above it gave us "LED Carry Tray | Illuminated Serving Tray for Drinks, Food, and Cigars" and sounds good to me. Wondering though if they may make site look clunky with long titles showing? Any advice...
3. Variants/Options. Using same example above the tray comes with optional accessories. We offer a Gel filled shotglass. We currently sell the glass standalone but we also sell it with the tray ofcourse. Sometime people loose them or want extras so we offer it as standalone on current site. However, on the shopify can someone recommend the most efficient path? Is it possible to just have them add additionals direct on the product page?
4. Collections and Categories. We are highly confused here and have read over shopify directions over and over but it's just not collection. I think we are on the verge of getting it thought lol... I will give example. We make a lot of games and all games have accessories and we plan or hope to offer the games (with option on page to choose accessories) and same accessories as stand alone. Should we be making seperate collections for accessories (ie... Collections/Games Collections/ Accessories etc...) or should the accessories be under games. Shopify directions tells me therer are also categories but we are unable to locate anything like that so I am guessing that collections are also the same thing? It's confusing though as directions say they are not the same...
