How am I able to add a picture to my home screen without my featured collections showing?

Depending on your theme, you can use other sections, such as the Slideshow or Image with text, to add images to your homepage. As an example, the Debut theme comes with the Gallery, Image with text, Image with text overlay, Slideshow, and Image slider sections that can help showcase your pictures in different ways. 

Here's a screenshot of the available sections in the Debut theme:

If you don't want to show the Featured collections, you can also remove this section from your homepage.
