Unable to track inventory

I'm unable to track inventory for any of my products as that option seems disabled (screenshot attached). This is causing customers to place orders that are difficult for me to fulfill and I'm looking for immediate help on the issue. I'm using Narrative theme, and the screenshot is what I see under the variant section on an individual product page.

If Shopify design isn't the right community for this, I'd be grateful if someone can please point me to the right community.

May I suggest steps below to update it.

1. Go to each product

2. Expand any variant

3. click to edit any variant

4. Check input tracking inventory

Thank you @EBOOST , that definitely helps!! I currently need to pause taking orders, however making each product quantity to 0 just shows it as sold out. 1) It might just be a frustrating experience for the customers to find that nothing is available after clicking on each product, do you have any recommendations for a better solution that solves this for my entire inventory?
2) Is there an option to add a notify me button where customers can enter email?
