Shopify themes, liquid, logos, and UX
I'm ready to move on to a paid theme, hoping that'll be more current, easier to create a better looking store with more bells & whistles and yet still not having to know how to code, am I correct? Can I please get some verifications? Thank you.

Not correct, it's a fallacy.
A premium theme does not guarantee any of the things your "hoping" for, nor does a free theme prevent achieving quality.
Hope is not substitute for an actual plan with dedicated design intent and specific feature requirements.
Themes are a starting point not magic, even premium themes may require custom code to get to a desired outcome or at minimum a heavy time investment in setting up a theme to look good for non-designers and not look like a drop shipping site,etc.
