Variant Out of Order

I have a photography prints business. I offer 8x12 through 40x60 for all products, fine art paper, dibond, etc, except for blockmount. For blockmount I only offer sizing in 6x9 through 20x30 (note that 6x9 is an additional size here - blockmount is the only product that I offer 6x9 for). 

On the website the 6x9 size is at the bottom of the list rather than the top, so it's out of chronological order. 

I've tried dragging and dropping the 6x9 size variant but when I click save Shopify moves it back. I can fix this by setting blockmount as the first product option, rather than the second, under the type variant, but having fine art paper first is actually important to my store layout, other ways I've structured my product line.

Does anybody have a workaround for this?

Yes. I would like 6x9 to be in the first position so that all size options appear in order from smallest to largest, top down.

On a separate note, but I'll mention it here in case it is relevant or you can help me with it as well, I only offer the 6x9 size in the Blockmount product - ideally it wouldn't show as "unavailable" in Fine Art Paper and the other products. Instead it should be hidden. There are three other sizes, 24x36, 32x48 and 40x60 that I offer for all products except for Blockmount, which I also wish do not show as "unavailable" (this time under Blockmount). Please let me know if that's something you could help with as well.
