Add printed collateral to shipments

We are a small winery and recently started using Shopify for our online store. For each wine bottle we ship a corresponding printed tasting note. What is the best way to add a Tasting Note SKU that is attached to a wine bottle SKU? Should I create a variant?  But I don't want the variant to show in my store or on the order confirmation. It should be hidden from customer view but still flow through FORT to our fulfillment house. Please help!
