Best way to organise a demo / speak to a rep?

I'm working for a NFP organisation and we're currently running WooCommerce but are keen (for a number of reasons) to switch to Shopify, but the team is keen to have a demo/requirements meeting with a Shopify rep, and I'm hitting some walls for how to line this up?

I thought I had organised it with the chatbot, as it said someone would reach out, but nobody has so thought I'd pop a question here for what's the best way to set up a chat 🙂
