Concerned that I signed up to Shopify with the intention of integrating Amazon, only to find out that it's only possible to do in USD. 

Can anyone recommend an e-commerce platform that DOES integrate with Amazon UK?

If you want to connect your main store on Shopify with Amazon UK, I recommend you use a third-party integration tool instead of the official Connect app by Shopify (I took a look and couldn't find it anywhere, seems like they have taken it down, but at that time it was still there). I did some research and found some options like Sellbrite, CedCommerce, LitCommerce, Codisto, etc. Finally, I chose LitCommerce to integrate Shopify with my Amazon Italy store and their tool so far has still been fine.

Just have an Amazon UK store ready and select the respective option during the setup stage. Whether your main store is on Shopify or Amazon UK is still alright. After connecting both stores to LitCommerce you can use their functions there. I'm listing my products in bulk and sync orders back and forth there and I find their services easy to use and within my budget. You can contact them and the other options I have listed above to see what they can do to help you.
