Of course, it can be done by using Shopify. But you will need to add some customization to your Shopify site to achieve your goals.

I think Shopify Plus is suitable for your need.

This could be possible with BookThatApp. Using the "Tours/Activity" booking type, you could add the airlines and their destinations as products (for example: JetBlue - MIA (Miami Int'l) ✈️ ATL (Hartsfield-Jackson)). In the product's configuration, you could set the duration for the flight and set the schedule in the "Schedule" section. You can set all the flight times in the schedule. I would recommend taking advantage of the 10 booking trial to see if the app is a good fit for your services.
