Credit Card information is securely stored on Shopify side and merchants have no access to it except for the last 4 digits of the card number.

Katy here from Shopify - thanks for reaching out, I can indeed understand how you may feel concerned here.
However rest assured, to chime in on what @Visely-Team has kindly mentioned - merchants (i.e. store owners using the Shopify platform) will only have access to limited information with regards to your payment details. They will only be able to see the last 4 digits in the order history. For example: MasterCard •••• •••• •••• XXXX. Other information is displayed as demonstrated here, and is to help with fraud analysis only.
We also have some more details on how data is securely managed in our Privacy Policy - under Section 3 - Information from Customers.
The only time a merchant may have access to bill an additional amount, is if you opt in for a subscription service or recurred billing, for example. This would be where you authorize a store to bill your account more than once in exchange for an ongoing or continued service, rather than a one-time purchase. In these cases, if you would like your data to be erased from any app from our app store, you can contact the merchant from whom you have made a purchase and they can delete your information.
That being said, if you are concerned regarding a particular store in any way, we have a dedicated FAQ to help you with the best steps to take. It outlines various situations and the options that you have available to you.
