Can you edit the product categories taxonomy?

Hi,

there's a way to edit the categories taxonomy?

I've organized the products in the menu using collections, to built a multi level product organization.

That's ok, but I'm wondering if it's possible to edit the products categories.
I'm asking that because I'd like to build a product breadcrumb and use the categories structure.

I managed that building the beadcrumb reading the collections associated to the product. For each level of collection associated, I'm getting the first collection association and show it to the breadcrumb.
Woindering if there's a better way to build a collection breadcrumb.
