I've come across an issue today in that if Online Store, the app/Sales Channel, is not installed then the 'Search engine listing preview' field does not exist on the product editing page and therefore you cannot visibly change the product url handle.
The product handle does exist still, based on the title set on product creation. I found this by exporting products as a CSV.
I ended up using Shopify's A.I. assistant to help change the product handles but surely this is a big oversight? I always found it odd that the product handle was hidden away there under 'Search engine listing preview' in general.

This is a known quirk with Shopify's product editor. When the Online Store sales channel isn't installed, the 'Search engine listing preview' section—and consequently the field to edit the product URL handle - is hidden. In that case, Shopify automatically generates the handle based on the product title, which you can only change indirectly.
If you need to manually adjust the URL handle, you'll have to install the Online Store channel temporarily to access that field. Alternatively, you can use CSV exports or Shopify’s API to update the handle if you’re comfortable with that approach.
It definitely feels like an oversight in the interface, and many merchants have noticed it too. Hopefully, Shopify will address this in a future update to make product URL management more straightforward.
