Deleting variants so they don't show up on webpage

I have some products with a bunch of variants adn each variant shows up on my website.  It's a retail store so colours change and sometimes in one product I'll have 1 left in a certain size colour and like 20 other sold outs.  I'd love to delete all those so my customer doesn't have to click each size and colour to figure out what's in stock.  If I delete though will I still have all my sales history etc..?

I understand your issue where you want to hide variants from your store that are out of stock so it will not create a bad user experience for customers. I recently came across an article and it works for me.
