We're exploring downgrading from advanced to standard Shopify and I'm looking for more detailed information on what we'll lose in terms of real-world functionality and whether such a change would negatively impact our site. I've browsed various help pages and it doesn't appear to be much different, other than the fee – however it must be quite different due to the difference in subscription!
We're less worried about the change in rates. It's due to our decling volume of sales. Losing international features is not a problem.

One of the key factors you'll want to consider before changing plans is the change in credit card rates between the plans if you're using Shopify Payments, or the transaction fee rates if you're using a third-party gateway. The Advanced plan will have lower rates than the Shopify plan, so by downgrading you'll be paying more in credit card or transaction fees as a result. The impact of this change will depend on your sales volume, so it's worth taking a look at these figures and getting a rough idea of how much more you'll be paying in processing fees each month by downgrading your plan.

Thanks Victor. That's really helpful. As far as I can tell the downgrade wouldn't 'break' our site and we can always switch back if need to.

No, it certainly wouldn't break—the main thing you'd need to wary of is the loss of the third-party carrier-calculated shipping rates if you're utilizing this feature, as downgrading from Advanced would require you to adjust your shipping rates accordingly.
