Facebook and Instagram Catalog Product Exclusions

Hello, 

I have some products that I do not want to show on the Facebook and Instagram shop. I have been thinking through the simplest way to do this. Can I create a new collection or collections that include the items and their variants that I want shown on the Facebook and Instagram store and select only "Facebook and Instagram" as the sales channel for those items? 

Or - 

Would it be easier for synching and updates to simply deselect "Facebook and Instagram" as a sales channel for the products I do not want to be shown?
