We want to track certain product parameters on the one-page checkout, which are entered on the backend using metafields. For example,
item_size item_bodycolor item_shape
Is there any way to track them on GA4 via Shopify Apps or Data Layers on Customer Events in the new Checkout Extensibility?

Thanks for your query.
Since Channel app is an automation process and follow their tracking model you can not customize the checkout if these data are not in the datalayer.
So try to integrate this on the datalayer.
If you unable to customize the datalayer and track these parameters you can easily track via Google Tag Manager.

We were tracking these attributes via data layers on Checkout.liquid; With the move to Customer events, we are unable to retrieve item.options_with_values data from Shopify
