How can I automate excluding specific SKUs from my reporting metrics?

We have samples that are set up as products (they have a very low cost compared to our standard products).  We would like a way to exclude these 50 or so skus in our reporting, so we can see metrics like conversion rate, AOV, etc, without samples.  I can run regular sales reports and manual exclude anything with the "sample" in the product name string, then export to sheets and manipulate, but I want a more automated way to see the reports within the shopify analytics tab.  there's also no way that I can tell to exclude products in the conversion and session reports.   Any suggestions?

There would be no good way to do this in Shopify analytics. Your best bet would be to try something like Better Reports or Report Toaster.
