My store sells only one-of-kind products. I am looking for a solution to customize the product status. For example, a product can be "On Hold", "On Memo" (out with a partner - which I guess can be accomplished with changing status to "Draft"), and "Sold". I want to be able to change product status manually. For example, a sold items may not be sold thru my Shopify setup.
Is there an app to help me do this, or would it require manual coding?

I can completely understand how this could be beneficial for your business model. And the good news is that it is possible to edit an order status page for orders placed or drafted through Shopify.
You should be able to achieve this with the help of a developer! You can actually post a job on the Shopify Experts page here and see what feedback and quotes you get.
