How can I effectively manage sales channels for my collections?

Hi - I’m creating a collection for Black Friday.  I’m preloading a bunch of products.  You can choose sales channels at the collection level and at the product level.  Can I make the product level all channels and then use the collection level to make the items live on just select channels.  For example, may want the collection to first only be online and then may later want it to show up on facebook.  Can I do this once at the collection level or do I have to fix it for all products in the collection?
