I've historically been a fan of Shopify's UI, but can't fathom why I can't get information about current, unfulfilled orders without resorting to paying yet more money for a plugin. The quantity next to "orders" in the left bar seems to mean nothing; I can't figure out what's even involved in that calculation.
Does anyone have a solution to get a simple number of unfilled orders and subtotal? This seems like basic, obvious functionality for a storefront solution.
Please no apps that charge or have a free trial. If this is unavailable without additional costs, there are other platforms out there.

Great question, I'd be happy to help you with this.
The number you are seeing next to the Orders tab in your admin is the number of open orders that you have. You can archive open orders to mark them as completed and remove them from that order tally.
If you are on the Shopify plan or higher then you have access to advanced order analytic reports from within your admin directly. You can review the available order based reports and their availability in our Help Center here: Shopify Help Center | Orders Analytics.
The information used in these reports is the same information that you can export from your orders page. If you are on the Shopify Basic plan and don't have access to the advanced reports, then you can export your order details to CSV and review in your preferred spreadsheet application. We recommend Google Sheets for editing or viewing CSV files.

I have many more unfulfilled orders than the number shown next to orders. Is unfulfilled not "open?"
The absence of an order count in the unfulfilled tab is crazy, and so is the lack of ability to total up the columns there without resorting to exporting a data file. I build software for a living, and these are the most basic elements of any bulk display screens in a backoffice area.

Unfulfilled orders are not the same as open order, and fulfilled orders are not the same as closed.
A closed order is an order that has been completed, but not necessarily fulfilled. Not all orders will be fulfilled, for example a cancelled or refunded order. But when you archive an order, or have it set to automatically archive when all line items are fulfilled, it moves to a "closed" state, which marks it as fully completed. Archived orders are not tallied in the number of open orders shown next to the Orders tab in your admin.
