Hi, I have just created a second shopify website and would like to link my current products with my new store. I want to be able to track inventory on both stores without having to link any SKUs. Is this possible through an app or can this be done in general?

A great question and this is something I introduced to a client's store last year.
The app 'Syncio' is likely to be a good fit for you: https://apps.shopify.com/syncio
You can control which parameters that you wish to sync & update (such as SKUs, pricing and descriptions).

The option to sync inventory between two Shopify stores is possible with the use of a third party app. This is typically done through an application like Syncio, SyncLogic, or Multi‑Store Sync Power that offers the functionality to sync your two stores products together so that any updates will reflect both stores.
Another common solution is to merge the two stores together and use an application like LockSmith or Wholesale Lock Manager to lock certain pages and sections of your site, giving you the power to choose who has access.
