Hi,
Yesterday, I installed the Google app for my Shopify store to use the Google Analytics extension. Unfortunately, this broke my entire website and it is no longer working properly. While searching for a fix, I found that I can restore the theme using code. However, I can only see the current version of my theme, not older versions. Can you please advise me on how to solve this?

It may be possible to roll back to an older version of your theme by navigating to Online store > Themes and selecting the ... to view the option Edit code. I took a screenshot from my test store to show you the section I am referring to:
Once you select Edit code, you should be able to make changes to the version of the theme if changes have been made to the coding. If changes have been made, you will see a dot appearing next to the file, like so:
