To change the display you want, you need to update the site name of your website.. Here's how you can do it:
Log in to Shopify:
Go to settings:
Click on Store Details:
Change your store name:
Save your changes:
Keep in mind it might take some time (a few days or weeks) for Google to update the changes. If you'd like to speed up the process, you can submit your updated site to GSC.

Thanks, I have executed your solution. However, the store name was as I would have wanted it, but in all caps. Yet, on Google it's showing the website url, which wasn't in the store name field.
I will review in a few weeks to see if it has updated.
