Google will choose the image it thinks is best for the results page - typically the most prominent, highest resolution image, but you can persuade it heavily by using Rich Schema markup.
You are currently passing an animated gif as your logo in your schema: https://cdn.shopify.com/s/files/1/0598/3263/1453/files/spin_no_background0001-0090_AdobeCreativeClou...
The fact that Google isn't showing it is indication they don't like it or simply prefer the one they are displaying. Try adding a logo in a higher resolution than the one they are using as a JPG.

What is the easiest way to do Rich Schema markup ?
You have Rich Schema being added to your site already, so you'll need to figure out how it's being added to your site and modify the image that it's using. Typically this is done via your template your or via an app.
