The Increased Variants developer preview enables you to use the GraphQL Admin API to create and edit products with up to 2000 variants. You can test the new APIs by enabling the Increased Variants developer preview on your development store.

To create a product with more than 100 variants or three options, you can use a third-party app in the Shopify App Store or customize your theme code to extract line item attributes . Thus, you can receive customized requests from customers.

Shopify limits you to adding three variants at a time and a maximum of 100 variants overall. You can use third-party apps that assist you in creating alternatives on the product page to add more variant possibilities. However, the inability to track quantities is a downside.
