I am not sure when it appeared (it used to be yellow with Paypal) but on my main product page there is now a blue bar that says "Buy with Shop Pay" underneath it has a use other payment options.
My gut response was that I did not trust this unheard-of Shop Pay. I researched it because I am on here, but I would back out of buying if I were shopping on someone else's website and saw it just because it seems suspicious to me (protective about giving my info online). My primary concern is that my shoppers will have the same initial visceral response of not trusting something that is unfamiliar being the prominent way to pay, so I don't want it the featured option.
So, #1 is how do I remove it from being the featured blue bar payment on my product page?
#2 I have learned it is unique to Shopify and includes installment payments. Does this mean we wait to ship until all payments are made? Is this a lawaway of sorts (I don't want to offer layaway of any kind)? Or do we ship when the order is made using this payment system - what happens if the customer fails to follow through on the rest of the payments? Are we as a Seller penalized?
I would really appreciate any help in clarifying my two concerns.

Both are great questions, and I would be happy to get you some more information on these topics.
Shop Pay showing as a Buy Now featured option is a dynamic express checkout option that will show various express payments based on the users device and browser cache. If they are on an apple product and using Safari then they might see Apple Pay, on a Google phone they might see Google Pay, and if they have used Shop Pay in the past then they might see Shop Pay. If the dynamic button can't recognize any specific express checkout options that the customer is eligible for, then it just shows "Buy Now". The link that @Dan-From-Ryviu shared goes into this in more detail.
This button is optional and you can disable it from within your theme settings. If you do not wish to offer Shop Pay then you can also disable that specifically in your Shopify Payments settings as well.
For the second question, how does Shop Pay installments work, is very straightforward. The customer makes their purchase and signs an agreement with Affirm (who powers our installment options). You receive payment in full and would fulfill the order as normal. If there is any issues with the installment payments that is between the customer and Affirm, the merchant is not involved in that.
