How to transfer the information from a business on shopify to a more easily readable spreadsheet

Im trying to route the information of my business to an easily readable/accessible format on a spreadsheet. I would like to avoid incredibly complex categories and would like to be able to compare our revenue and the cost of production to create a profit and some other categories

For some reason I dont have the tab for apps on my homescreen of shopify

Then use shopify flow and it's google sheets connector, you'll still have to figure out the business logic like whether it's using order totals, or granular to line items, etc.

Otherwise use an app like reporttoaster.
