I want a product live/active but not showing on our e-comm site. Can I do that?

Of course. Just deselect the Online Store sales channel. Its under Publishing on the right side.

Thank you, I did that but can't navigate to the product by direct url. It
gives a 404 page not found when I paste the url into a new tab.

Do you just want a product that is listed on the admin, is not searchable, but is able to be viewed only by direct url?

Correct, I do not want it to display in the navigation and do not want it
searchable on our site but I want it to be a live product that I can send
users to directly. Thank you.

I am not sure what you are wanting then. You said you did not want it to show on your site.
