If I uninstall an App that has an active subscription, does it mean I have unsubscribed and won't be charged there after? I had a hard time trying to find where to cancel subscription and could only find the uninstall app option, but there's no information if I will still be charged for future months.

Uninstalling an app will also mean that your subscription for that app has been cancelled. Therefore, you will not be billed for the usage of the app in future months.
In case you see that you are billed wrongly for an app that you have uninstalled, you can contact support team of that app or Shopify support at https://help.shopify.com/en/support to ask for checking the bill.
