is there a plugin (possibly free) that allows me to add a free "hidden" product (and therefore inaccessible from the store) every few products of a certain type purchased?

That’s a great question.

To give you the best advice possible, it would be great if you could share more about your idea. For example, will you be sending the same item for each surprise gift, or will there be multiple different options? 

For this feature, you’d need a help of an app. There is a free app called Automatic Free Gifts. You can install the app to your store from this link. 

If you don’t want customers to know what they’re going to get as a gift, you could create a separate product called ‘Gift Surprise’, assuming you will give each customer the same gift item. Ensure this product is not tied to any collection and it won’t be accessible except via direct link.
