Is this possible that i don't want to use shopify sitemap but i want to use my custom .XML sitemap?

My SEO consultant give me these files and told me that remove shopify sitemaps and integrate .xml file which I give you. Below the screenshot of files. Help me if this possible.

@AA31 - you do not have to utilize the Shopify sitemaps, although I would say the majority of Shopify stores we have seen do. You would just go to your Google search console and add the new sitemaps if you choose to do so.

What is the reasoning for not using the default Shopify sitemaps? 

I'm guessing either the SEO isn't familiar with Shopify or you have some very unusual use-case.
