Local pickup even if the item is not in stock?

I understand that local pickup is only possible to choose for a customer if the item is in stock in the local store?

We have 5 stores and a central warehouse. This means that most of the goods we offer on our webpage are in our central warehouse. But we still want customers to be able to choose local pickup (and we will send the goods from the sentral warehouse to the local shop) How do we achieve that?
