Lost Blog - Shopify Deleted It and Won't Restore?!?

At some point between Monday and Thursday our entire blog disappeared

Years of work

The Shopify logs can't be searched, we tried to contact but they denied it even happened! Said they can't find it in their log (I guess it's a technical issue and they don't want to admit to it)

Does anyone know some reasonable ways to back up our site? I can't make Shopify help us, but I can at least try to prevent it after we spend all the work trying to find cached versions and fix it.
