Making specific items “unavailable” or “out of stock”

Hi! I’m using the $29 version of Shopify. I’m in the process of creating a website with various items in various sizes and colors for sale. However, the challenge I’m having is to figure out how to make ANY SPECIFIC item unavailable or out of stock. 
My products are grouped with 2 variants (color and size) and if I click on Product I know I can make it unavailable BUT that will apply to ALL items and that’s not what I need. Can anyone help? Do I need to upgrade to the next level of

Generally when product inventory reach to 0 it will automatically become unavailable or out of stock. You can also manually change the inventory.
But if you are looking for advance option means without changing the inventory assign specific products or product variants unavailable or out of stock then you can use metafields but for that you have to hire a developer.
And there is no need to upgrade the plan for it.
